... another item I have noticed with the YouTube interface is that changes to recording quality and save location do not remain after player quit and new start. They always revert to a default.

This can happen if you put the portable version in a read-only location. It needs to be able to write to the same directory so it can save its settings. A simple place to try is your desktop.
